Apple cobbler smells so good when it cooks. Delicious with ice cream. I can't make enough of this in the fall.
Ingredients
Filling
- 6 cups tart apples, peeled and sliced into wedges
- 1/3 cup sugar
- 2 TBL flour
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 cup water
Topping
- 1/2 cup flour
- 1/2 cup sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 egg
- 1 TBL softened butter or bakeable margarine
Hardware
- One 9 inch glass pie pan
- wire whisk
- 3 medium bowls
- wooden spoon
- wire rack
Directions
Filling
In a medium bowl whisk together sugar, flour, cinnamon, salt. In another medium bowl mix together water and vanilla. Add flour mixture and mix with whisk. Should be soupy. Mix in apples.
Topping
Whisk together flour, sugar, baking powder, salt. In another medium bowl lightly beat egg and butter. Add dry ingredients and mix (I use a wooden spoon).
Cobbler
Pour filling into pie pan. Dot topping over filling in nine portions. Bake 35 minutes at 375 degrees on center rack or until crust is golden brown. Cool on wire rack.
Doug's Notes
Granny smith apples work well. Whisking adds air and insures the dry ingredients are mixed well. Do not use a metal pie pan - the fruit will stick to it.
