Easy to make salad dressing.
Ingredients
- 1 carrot, thin sliced
- 2 tsp dried ginger (2 tbsp fresh)
- 2 tbsp rice vinegar or apple-cider vinegar
- 2 tsp honey
- 2 tsp dark sesame oil
- 2 tsp extra virgin olive oil
- 1/4 tsp fine sea salt
- 1 garlic clove, minced
Directions
In a small saucepan, boil then simmer, covered, carrots (covered with 2 inches water) until soft, about 6 minutes.
Put carrots, 1/4 cup cooking liquid, and rest of ingredients in a blender. Puree until smooth.
Store in refrigerator.
