Chicken Coriander
Chicken coriander is easy to make and tastes subtly delicious.
Ingredients
2 boneless chicken breasts
1/2 tsp coarse black pepper
2 TBL light soy sauce
1 TBL red wine vinegar
1 TBL dry white wine
1 tsp brown sugar
1 tsp coriander, dried
2 cloves garlic, minced
1/4 tsp poultry seasoning
Directions
Mix soy sauce, vinegar, wine, brown sugar, coriander, garlic, and
seasoning in glass bowl. Let sit for 30 minutes. Pour marinade on
chicken and let sit for 2 hours. Remove chicken and pat dry.
Saut� chicken in 1 TBL light olive oil until done, about 7 minutes per
side. Sprinkle with black pepper and serve.
Notes
I use a digital thermometer probe to tell when the chicken is done (about 160 degrees). Chicken will cook after it is removed and raise the temp about 5 to 10 degrees.
