Simple to make marinara sauce.
Ingredients
- 6 cups tomatoes, diced, peeled, and seeded (28 oz can and 14 oz can or fresh Romas)
- 1 yellow onion, diced
- 2 garlic cloves, minced
- 1 tsp sugar
- 1/4 cup red wine
- 1 T extra virgin olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 3 fresh basil leaves, chopped fine
Directions
Slowly caramelize onions in evoo on low heat.
Add garlic, dried herbs and cook about 5 minutes.
Deglaze pan with wine. Cook 2 minutes.
Add tomatoes with juices, sugar then stir. Low simmer, uncovered, until
thickened, about 40 minutes.
Stir in basil leaves.
Doug's Notes
When simmering, the lower the better. The liquid should have few bubbles in it.
Long heat on fresh herbs will lose a lot of flavor; hence adding them at
the end.
