Panko is a special way to make breadcrumbs. The crumbs are jagged so they have air space in between them. This reduces sogginess. The result is a crispy oven-baked moist chicken.
Ingredients
- 2 chicken breasts
- 1 large egg
- panko crumbs
- white or wheat flour
- 3 shallow pans
- 1 baking pan with wire rack
- Olive oil spray
Directions
In one shallow pan, whisk egg and 1 T water.
In one shallow pan, put in flour to dredge chicken.
In one shallow pan, put in panko bread crumbs.
Dredge chicken breasts in flour, then egg mixture, then bread crumbs. Sprinkle
and press bread crumbs on chicken.
Spray top of chicken with olive oil.
Put breaded chicken on wire rack.
Put wire rack w/chicken in refrigerator for 20 minutes to let crumbs settle.
Preheat oven to 350 degrees and cook 15 minutes on the middle rack. Make sure center of chicken is 160 degrees.
