Various seasoning recipes.
Fuddrucker Seasoning
Sprinkle on both sides of a hamburger before grilling.
- 2 tsp paprika
- 1 1/2 tsp black pepper
- 1 1/4 tsp salt
- 1/2 tsp dark brown sugar
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp ground cayenne pepper
Poultry Seasoning
- 1 tsp sage
- 1 tsp thyme
- 1 TBS salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 TBS paprika
- 1/2 tsp black pepper
Emeril's Creole Seasoning
- 2 1/2 TBL paprika
- 2 TBL salt
- 2 TBL garlic powder
- 1 TBL onion powder
- 1 TBL dried oregano
- 1 TBL cayenne pepper
- 1 TBL black pepper
- 1 TBL dried thyme
I use this on blackened fish and chicken.
Old Bay Seasoning
- 2 T celery salt
- 1/4 tsp ground black pepper
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
- 1/8 tsp ground ginger
- 1/8 tsp ground mace
- 1/8 tsp dry mustard
- 1/8 tsp ground cloves
- 1/8 tsp ground cardamom
- 1/8 tsp ground cinnamon
- 1/8 tsp ground allspice
Originally used on steamed crab, shrimp, and lobster. Good on seafood and chicken.
Emeril's Southwest Seasoning
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 2 tablespoons paprika
- 1 teaspoon black pepper
- 1 tablespoon ground coriander
- 1 teaspoon cayenne pepper
- 1 tablespoon garlic powder
- 1 teaspoon crushed red pepper
- 1 tablespoon salt
- 1 tablespoon dried oregano
Combine all ingredients. Yields 1/2 cup of seasoning.
