Easy to make and very tasty. I made this after Thanksgiving.
Ingredients
- Chopped turkey breast, 1/2 inch square
- 1 garlic clove, finely chopped
- 1/2 yellow onion, finely chopped
- 1 carrot, diced
- 1 celery stalk, diced
- 4 cups chicken broth (2 cans)
- 4 cups water
- 2 tsp dried parsley
- 1 TBL canola oil
Directions
In a soup pot or dutch oven, sweat the onion, carrot, and celery in oil until softened, about 10 minutes.
Add garlic, parsley for 15 seconds.
Add broth, water, and turkey. Scrape up any goodies off the bottom of the
pot.
Bring to boil then simmer, covered, for an hour.

This makes a lot of delicious broth; you may want to double the carrot and celery.
