White Fish with Wine Sauce
A delicious way to cook orange roughy or any mild white fish. Mild tasting.
Ingredients
- 1 pound orange roughy
- 1/3 cup milk
- 2 tsp cornstarch
- 2 diced Roma tomatoes
- 1/3 cup dry white wine
- 1 tsp dried parsley
- 1/2 tsp ground black pepper
- 1/4 cup chopped onion
- 1/4 cup red pepper, chopped
- 1 clove garlic, minced
- 2 TBL light olive oil
Directions
In a small bowl, mix cornstarch in milk.
In a bowl, mix tomatoes, wine, parsley, and black pepper.
In 10 inch skillet, on medium heat, cook onion and red pepper in olive
oil until tender. Stir in garlic and cook until fragrant (about 10
seconds).
Push onions and pepper aside and add fish. Add tomato mixture around
sides of fish. Cover and cook until fish flakes, about 10 minutes to the
inch.
Remove fish. Add milk mixture and stir until thickened and bubbly. Pour
over fish and serve.

I sometimes sneak a few drops of hot sauce to enlighten my tongue.
